SUSTAINABLE MANAGEMENT AND FOOD INDUSTRY (II MOD)
The course aims to develop student’s skills and abilities in order to allow them to use the acquired knowledge and apply the principles and tools of sustainable management to the strategic and operational decisions of companies and organizations operating in the agri-food system. The learning objectives can be detailed as follows:
Knowledge and understanding: the student must demonstrate to understand the issues related to sustainable management issues in the agri-food system and to know the main tools that can be used to implement a sustainable strategy at companies and organizations level.
Ability to apply knowledge and understanding: the student must demonstrate the ability to apply the acquired knowledge to practical cases. To this end, the lecturer will propose to students the realization of project works aimed at stimulating the application of the theoretical knowledge acquired to specific case studies.
Making judgments: the student must demonstrate the ability to apply the skills provided during the course with the development of specific case studies.
Communication skills: the student must be able to clearly present the acquired knowledge through the presentation of the assigned project works and during the oral examination.
Learning skills: the student must demonstrate a good learning ability and be able to deepen his / her knowledge on bibliographic references relevant to the field of study. This capacity is also necessary to carry out the specific in-depth analyses agreed with the lecturer.
Basic knowledge of microeconomics.
This block of course aims to develop the following knowledge and skills:
- the theories, concepts and methodologies, which define the quality and implementation tools in agri-food businesses (6 hours);
- product and process quality certification systems (8 hours);
- labels and sustainability brands in the agri-food sector (6 hours);
- Presentation of case studies (4 hours).
The program is conducted through lectures and presentation of case studies selected by the lecturer over the course.
Lecture notes by the teacher that will be distributed in the classroom and made available through the Moodle e-learning platform.
The objective of the examination is to verify the level of achievement of the previously indicated educational objectives. In this regard, for those who follow the course, during the lessons the achievement of the educational objectives will be evaluated through the development of project works aimed at deepening the case studies proposed by the teacher, and by an oral test aimed at verifying the acquired knowledge, the understanding capacity and communication skills with respect to the topics listed in the program. The final grade will be an average between the evaluations of the two tests. For non-course participants, the verification test will consist of an oral exam aimed at verifying the acquired knowledge, the ability to understand and communicate with respect to the topics reported in the program.
