Course description

Knowledge and understanding:
The student must demonstrate knowledge of the main characteristics of modern agri-food systems, of the theoretical problems related to food quality and safety, of the tools necessary to manage them.
Ability to apply knowledge and understanding:
The student must demonstrate the ability to understand the main risks and opportunities related to food quality issues and to be able to indicate potential corrective measures and management tools.
Autonomy of judgment:
The student will have to demonstrate the ability to use the most appropriate concepts and terminology for the particular and concrete situational contexts proposed, relating to the themes of food quality.
Communication skills:
The student must demonstrate the ability to communicate concepts as well as concrete situational contexts proposed in a clear and appropriate way in relation to the themes of food quality.
Learning ability:
The student will have to demonstrate a good learning ability and application of the acquired knowledge.

Prerequisites

Formally none; however, knowledge of basic business and economic subjects is necessary for understanding the various topics covered during the course.

Syllabus

I block: 24 h:
Problematic definition of the concepts of quality and safety in the agri-food context. EU policies in favor of quality and consumer protection. Community and national bodies.
II block: 24 h.
International law. Mandatory and optional labeling. The rules on GMO products. The certification tool. Typical brands. Organic certification marks. The role of the consumer, the role of information, the tools. Quality assessment methods.

The course aims to provide in-depth knowledge on quality and safety issues in agri-food systems, exploring the motivations, objectives and tools available to all stakeholders operating at different levels of the system, namely the public operator and institutions , the business system in its production-transformation-commercial distribution, consumers.
The knowledge and management of these issues is of fundamental importance both in the international and global context, and at local level, particularly important for agri-food businesses.

Teaching Methods

Lectures and seminar activities proposed by experts and / or solicited to attending students.
The course is organized both with a frontal teaching path and with analysis of real and topical case studies selected by the teacher, also through individual or group practices. The course also includes the possibility of using the Moodle e-learning university platform (Forum, Chat, Tasks, Glossaries, Polls, Quizzes, etc.), for further information and / or exercises and additional support for students: so at the same time the possibility for learners to develop the capacity for self-learning through mutual interaction and sharing with the group of students, thus creating a real experiential laboratory. Finally, students are also offered the opportunity to attend seminars of well-known scholars in the business world or institutions hosted in the University.

Learning assessment

During the course the degree of learning will be evaluated through the development by the students of case studies, also thanks to the use of the University e-learning platform. Furthermore, at the end of the course, the exam will consist of a written test (open answer test).
The written exam is aimed at ascertaining the level of learning of the theoretical and applied subjects dealt with and the ability to contextualize them in the reality of the local, national and international agri-food system.
Participants and non-students must take an exam consisting of a written assignment consisting of open questions on the program topics.
