Course description

The course focuses on the management and organizational specificities of agri-food companies operating along the supply chain, including production, processing and distribution of food products. The course aims at developing the students' skills with reference to the strategies of the agri-food companies, specifically considering the aspects related to the factors of competitiveness and the role of public regulation. In particular, the course enables students to acquire the ability to analyze and assess critically the evolution of the competitive scenario and the relationships among companies and to understand the different forms product quality management and assurance.
Knowledge and understanding- the student has to demonstrate ability to understand: the specific characteristics of the companies operating in the agri-food supply chains and their strategies.
Ability to put knowledge and understanding into action- the student has to demonstrate ability to analyze and to portray the evolution of the competitive scenario and the strategic interactions among companies and to understand the different forms product quality management and assurance.
Independent thinking- the student has to demonstrate a critical ability to evaluate both the evolution of the competitive scenario and the different competitive strategies of agri-food companies.
Communicative Skills- the student has to be able to answer clearly, coherently and exhaustively to questions in written final assessment. The student will also develop the ability to convey the knowledge acquired clearly and satisfactorily also through class discussions on additional topics.
Learning Skills- the student has to demonstrate a good ability to learn by deepening knowledge through the use of relevant and authoritative bibliographical references in the field of study. Furthermore, the student will integrate the knowledge acquired in previous courses with further skills that characterize the course.

Prerequisites

Basic knowledge of some basic elements of microeconomics (demand, supply and market forms) and Business Economics.

Syllabus

The topics covered in the course are organized in III parts.
Part I (24 hours)- Agri-food system: definition and analysis tools (filiera, supply chain). Sectors structural analysis: agriculture, food industry, retailer and catering. Specific characteristics of agri-food products: supply, demand and market. Evolution of consumer preferences. Information asymmetry (food safety and quality), product differentiation and quality in food markets.
Part II (18 hours) - Tools to report and guarantee the characteristics of products business-to-consumers and business-to-business (brands, standards and certifications). Business strategies and organization of the agri-food system. Evolution of the relationship between industry and modern distribution. Private label. Quality certification schemes: product, environmental and ethical-social.
Parte III (30 hours) - European Union regulations: product safety, quality and information (labeling). EU Farm to Fork Strategy for a fair, healthy and environmentally-friendly food system. Supply chains organized by modern distribution: characteristics and problems (market power and economic and social sustainability). Regulation of unfair trading practices in business-to-business relationships in the agricultural and food supply chain.

Teaching Methods

The course is organized in traditional lectures and in-class discussion of articles/reports and audiovisual material.

Textbooks

Handouts edited by the teacher, a selection of articles/reports and audio/video material that will be available on the e-learning platform at the beginning of the course.

Learning assessment

Final assessment is based on a written test aimed at evaluating the achievement of the learning objectives. In order to assess acquisition and in-depth learning of general theoretical knowledge, the written test consists of 5 open questions (each with a maximum rating of 6 points) about the topics covered in the program. Questions are aimed at assessing the knowledge acquired, and the ability to elaborate critically and debate on issues touched upon over the course.
Exam is 1 hour and 15 minutes long.
