Course description

The course aims at developing the students' knowledge with reference to: planning and implementing strategies for the enhancement of agri-food products, on the national and foreign market; mechanisms underlying the processes of valorisation and marketing of High Quality Food and the appropriate support tools. In particular, the course enables students to acquire the skills to plan strategies for the enhancement of quality productions and to better orient both company strategies and public intervention in the enhancement of Made in Italy agri-food.
Knowledge and understanding- the student has to demonstrate ability to understand the main methodological tools necessary for the planning and implementation of strategies for the enhancement of agri-food products both on the national and international markets.
Ability to put knowledge and understanding into action- the student has to demonstrate ability to apply the skills acquired to concrete cases, with respect to companies and organizations engaged in the production of high quality agri-food products.
Independent thinking- the student has to demonstrate a critical ability to appropriately evaluate the strategies for enhancing quality productions, also through the autonomous development of project works that simulate the preparation of an enhancement plan.
Communicative Skills- the student has to be able to answer clearly, coherently and exhaustively to questions in both the written test. The student will also develop the ability to convey the knowledge acquired clearly and satisfactorily also through class discussions and project works presentation.
Learning Skills- the student has to demonstrate a good ability to learn by deepening knowledge through the use of relevant and authoritative bibliographical references in the field of study. Furthermore, the student will integrate the knowledge acquired in previous courses with further skills that characterize the course.

Prerequisites

Basic knowledge of Business Economics.

Syllabus

The topics covered in the course are organized in III parts.
Part I (16 hours) - The evolution of consumption styles and the concept of food quality. The economic analysis of consumer behavior with respect to food products; The main drivers that characterize modern food demand; Theoretical analysis of quality: from the economic approach to the marketing approach; The role of the territory in the definition of agri-food quality
Part II (16 hours) - Policies to support the enhancement of quality agri-food productions linked to the territory. The quality protection regimes in the European Union; Economic and social impact of protected Geographical Indications; The international dimension of the Geographical Indications market; The debate on the protection of geographical indications in the international context; Other forms of collective protection of food quality; The contribution of the Common Agricultural Policy in promoting food quality.
Part III (16 hours) - Strategies for the enhancement of quality productions. Territorial marketing strategies for the promotion of agri-food quality; Food and wine itineraries (tours) as tools for enhancing the Made in Italy agri-food; Short chain forms for promoting quality agro-food products.

Teaching Methods

The course is organized in traditional lectures and presentation of business case studies and exercises. During the course, students will be guided in the implementation of project works with the aim of simulating an enhancement strategy for specific local food products.

Learning assessment

Final assessment is based on a written test aimed at evaluating the achievement of the learning objectives. In order to assess acquisition and in-depth learning of general theoretical knowledge, the written test consists of 5 open questions (each with a maximum rating of 6 points) about the topics covered in the program. Questions are aimed at assessing the knowledge acquired, and the ability to elaborate critically and debate on issues touched upon over the course.
Exam is 1 hour and 15 minutes long.
